Around midnight, during my most recent trip to Las Vegas, I was struck by an all consuming desire.  Not for one more hand of poker, not for dancing, but for soft pretzels.
 
As somewhat ridiculous as this desire might sound, it really was all consuming.  Post-concert and a few drinks, I was really craving something with the perfect balance of salt & belly busting gluten.  What began was a multi-phone pretzel search for a late night pretzel chain in Vegas.  Sadly, in spite of the rigor of our search, I went to sleep that night without a pretzel.  
 
To help you not fall into the same pitfall, I've compiled this handy restaurant guide to enjoying the Bavarian treat in Sin City:   
 
Manhattan Streets
Known for its New York style hot dogs, this little restaurant at Harmon Corner, just south of the Planet Hollywood Resort's Miracle Mile, also serves up tasty, warm pretzels late night.  On Fridays and Saturdays, they stay open until 3am!  
New York Pretzel
With three strip locations to serve you (New York, New York Hotel & Casino, Bally's, and the MGM Grand Hotel & Casino), this pretzel chain is open every night until 1am.  The Jalapeño Pretzel is a crowd favorite.
German Bread Bakery
This authentic German bakery bakes up pretzels and other Bavarian baked goods so popular, you often have to arrive by noon on a Saturday to snag the tasty treats.  Have a late night? Just take a cab to one of their two locations to arrive at their 9am opening!
Hofbräuhaus Las Vegas
Hofbräuhaus Las Vegas (an exact replica of Hofbräuhaus in Munich, Germany ) is the first and only German beer hall and restaurant in Sin City.  With pretzels, a massive Beer Hall, live music, and a beer garden, you'll get much more than just pretzels. 
Society Cafe
Not quite a pretzel, but the classiest place to enjoy a bite of Bavaria in town, the Society Cafe in the Encore/Wynn Casino offers up some tasty pretzel bread with mustard butter served with every meal.
Auntie Anne's
This famous chain operates a retail store in the Circus Circus Hotel at the north end of the strip, and another inside the Las Vegas Premium Outlets.
 
Wetzel's Pretzels
Three Wetzel's locations are available to serve you: Inside the Rio Hotel, the Las Vegas Town Square, and the Las Vegas Premium Outlets (off the strip).
 
Pretzelmaker
Pretzelmaker (often linked with TCBY Yogurt) sadly offers no strip locations; you can catch them inside the Meadow's Mall and the Boulevard Mall (a stone's throw east from the strip), and also in McCarran Airport on your way to and from the action of Las Vegas.
