Enjoy a Taste of London at Hawksmoor!

 

One of London’s favorite steakhouses, Hawksmoor, has announced plans to open a fourth location – this one on Air Street just off Piccadilly Circus. Planned to open November first, the new restaurant and cocktail bar promises to bring an entirely new challenge for owners Will Beckett and Huw Gott.

Having seemingly conquer the London steak market to serve what many believe to be this town’s perfect slab of beef, Beckett and Gott have teamed up with renowned seafood chef, Mitch Tonks (of Dartmouth’s The Seahorse and RockFish restaurants), to add a bit of “surf” to their “turf” heavy menu.

Of course, the well know steaks will obviously be available at the new location, but the menu will also feature fish such as turbot, monkfish, John Dory and Dover Sole grilled over charcoal along with a large selection of shellfish, a solid range of Hawksmoor classics as well as some new surprises. Says Becket:

We opened our first restaurant when there were fewer high end steak restaurants and have tried, over the years to keep ahead of the burgeoning number of places offering ‘prime cuts, cocktails and a fantastic wine list’ by doing something a bit different each time – burgers, dogs and wings, “tour-of-a-cow” beef tasting menus and gargantuan breakfasts have all made an appearance. We’re incredibly excited to be opening a seafood and steak restaurant.

To complement the fish and seafood, Hawksmoor’s extensive wine list will now also have a much enlarged white wine list for Air Street, including a specially selected white from Domaine Girault in Bue, a small village in the heart of Sancerre region where eighth generation winemaker, Patrick Girault, and his son, Adrian, have 12 hectares of organically farmed vineyards. The Hawksmoor team have also blended their own wine with Clotilde Davenne in Chablis from three different villages, 55% Chichee, 35% Maligny and 10% Vaudelune.

The infamous Hawksmoor cocktail list will get an overhaul too. One of the new cocktails, a Full-Fat Old Fashioned will use a homemade butter infused bourbon, made over several hours with large quantities of bourbon, clarified butter in a sous-vide machine.

The Air Street Hawksmoor will be the biggest project to date for the restaurant group, with 235 covers in the restaurant’s dining area and another 50 in the bar. As with all interiors at the three currently open restaurants in the Hawksmoor group, reclaimed materials have been used throughout to create a comfortable “lived-in” feel for the new location, such as teak parquet floor from a Royal Air Force base and school chemistry lab tops for tables.
