Desserts with a Twist Take Center Stage in Las Vegas, IMG Cred: LemongrassIn Las Vegas, where cupcakes can go for $1,000 and sweet, sweet, sweet is the name of the game for the last course, there’s a new trend emerging. One that will tickle the taste buds of even the most ardent dessert nay-sayer: savory dishes.

Gone are the days where appetizers and main dishes relish in the flavorful spices and seasonings. Now, desserts are spotlighting these, too.

So, skip the sugar and try some salty, spicy, veggie desserts. Or, at least, those with a little something other than the sweet, sweet, sweet.

Andre’s Restaurant & Lounge, Monte Carlo. This popular French restaurant serves up a Salt and Pepper Chocolate Cake. The cake, which is delivered on a bed of salty caramel sauce, is topped with apricot mousse and marzipan, along with a light dusting of peppercorn flakes.

Aureole, Mandalay Bay. A twist on the apple pie, the Streusel Backed Lady Gala Apple is a salted caramel bombe with green cardamom ice cream, creating a herbal and citrus packed ending to a meal.

Lemongrass, ARIA. Try the Iceberg. It’s black jelly created from stalks and leaves of Mesona chinensis (a member of the mint family) and jack fruit, along with shaved ice, sweet corn and coconut jelly.

MICHAEL MINA, Bellagio. The Root Beer Float here isn’t the traditional Root Beer Float. Instead, the restaurant has gotten rid of the vanilla ice cream and tops it with sassafras ice cream. For extra dessert measure, they also throw in two chocolate chip pecan cookies. This float is an entirely different dessert treat.

Tom Colicchio’s Craftsteak, MGM Grand. For something truly different, order the Almond Brown Butter Cake. It’s served with quince which has been poached with star anise and made with roasted autumn royal graps, and topped with fig and vanilla bean ice cream and herbal cardamom.
